Aloo Tikki Chaat with Dried Fruits

Also known as potato tikki chaat

Crispy potato tikkis layered with yogurt, a homemade date-tamarind chutney, fresh green chutney, sev, and dried fruits and nuts for a boost of nutrition.

Did you know? Chaat comes from the Hindi chaatna, “to lick”, because it’s so good you lick your fingers. Read my story →

To assemble

  • finely chopped onion, tomato and coriander
  • generousplain yogurt (curd)
  • a handfuldried fruits & nuts: almonds, cranberries, dates, apricots, pumpkin seeds
  • to topsev
  1. 1
Cook the potatoes until soft: pressure cook, boil or steam. They just need to mash easily.
  2. 2
Start the date chutney. Put the dates, tamarind and jaggery in a pan with 1–2 cups of water, bring to a boil and cook 10–15 minutes until soft.
  3. 3
Spice it. Add the fennel powder, roasted cumin, chilli, coriander powder and salt. Keep cooking until the dates are mushy, adding water if it gets thick.
  4. 4
Mash or grind, then strain for a velvety chutney. If you need to loosen it, add only hot water.
  5. 5
Green chutney. Grind the coriander, green chillies, peanuts, lime juice, ginger, chaat masala and salt to a fine paste. No cooking needed.
  6. 6
Make the tikki mix. Peel and mash the potatoes, then add salt, green chillies, a little chilli powder, coriander, cumin and ajwain.
  7. 7
Add 2 tbsp of binding flour (rice flour, plain flour or breadcrumbs) and mix well.
  8. 8
Shape. Oil your hands, roll small balls and press them gently into cookie shapes.
  9. 9
Shallow fry in hot oil, turning from time to time, until golden brown and crispy.
  10. 10
Prep the toppings: onions, tomatoes, coriander, dried fruits and nuts (chop the dates and apricots), yogurt and sev.
  11. 11
Assemble. 2–3 tikkis, then onions, tomatoes, a generous spoon of yogurt, date chutney, green chutney, dried fruits, coriander and finally sev on top.

Tips from the video

Use soft dates if you can. Hard dates need much longer to break down.
Tamarind paste is strong. Adjust the amount if you use paste instead.
Only add hot water to the date chutney when loosening it.
Pick your binder. Rice flour, plain flour or breadcrumbs all hold the tikkis together and make them crispy.
Let everyone build their own plate, with as much yogurt and chutney as they like.
Make your own sev with the method from my Kerala Mixture recipe.

Make ahead: both chutneys keep in the fridge for a few days in a closed jar.
Re-crisp the tikkis in the air fryer for 3–4 minutes if made in advance.
The story behind the dish

Chaat, with a London twist

I love chaat, and the trio that comes with almost every chaat: yoghurt, green coriander chutney and sweet-and-sour tamarind chutney. To me, they wake up every part of your taste buds, and whatever goes with them tastes delicious.

In this version, I tried adding dried fruits, because I saw it at an Indian restaurant in London (they're so innovative there with their menus). The tikkis, the potato part, turned out super soft.

It was really tasty, although I'm very tired at the end of a filming day, as I'm the only one doing the whole thing: lights, camera and action, haha.
