Lamb Curry with Fresh Spices

Also known as mutton curry

My tried-and-tested lamb (mutton) curry: tender boneless shoulder cooked with whole spices, then brought together with a rich onion-tomato masala.

Did you know? In India, “mutton” usually means goat, not sheep, so most mutton curries back home are actually goat curries.

Lamb

  • 450 gboneless lamb shoulder, in small pieces (420–500 g)
  • 1 tspsalt
  • a pinchturmeric powder
  • ¼ tspchilli powder
  • 1 cupwater (more without a pressure cooker)
  • 1bay leaf (optional)

Ginger-garlic paste

  • 8cloves garlic
  • 1½ inchginger

Whole spices (half for the lamb, half for the masala)

  • 2cinnamon sticks, 1 inch each
  • 4cloves
  • 4cardamom pods
  • 1 tspblack peppercorns
  • optionalstar anise

Masala

  • 4onions, thinly sliced lengthwise
  • 2tomatoes, chopped medium
  • someoil (I use coconut oil)
  • ½ tspsalt
  • ½ tspturmeric powder
  • 2 tbspcoriander powder
  • ¼ tspgaram masala
  • 4curry leaves (optional)
  • a small bunchcoriander leaves (optional)
  1. 1
Prep. Cut the lamb into small pieces. Peel the garlic and ginger and set out the whole spices.
  2. 2
Make the paste. Mash the ginger and garlic for about 5 minutes into a paste.
  3. 3
Cook the lamb first. Add 1 tbsp of the paste, half the whole spices, the bay leaf, salt, a pinch of turmeric, ¼ tsp chilli powder and 1 cup of water. Pressure cook on high (about 5 minutes on induction, or 5–7 whistles), or simmer 20–25 minutes with more water. Keep the cooking liquid.
  4. 4
Start the masala. Heat oil on medium, sauté the rest of the paste for a couple of minutes, then add the remaining whole spices for about a minute.
  5. 5
Cook the onions for about 10 minutes, until really soft and starting to brown.
  6. 6
Add tomatoes and spices: ½ tsp salt, ½ tsp turmeric, 2 tbsp coriander powder, ¼ tsp garam masala and a few curry leaves. Cover and cook 5 minutes.
  7. 7
Blend or not. Cool and blend for a smooth gravy, or leave it as is. I keep it chunky for the crunch of the whole spices.
  8. 8
Bring it together. Add the lamb and its cooking liquid to the masala and cook on medium-high for about 10 minutes, stirring, until the gravy thickens.
  9. 9
Finish with chopped coriander and serve with plain rice.

Tips from the video

Boneless shoulder is the best cut. It soaks up the spices and turns soft and tender.
Cook the meat separately. It gives you full control over how thick the final gravy is.
No pressure cooker? Add more water and simmer 20–25 minutes.
Smooth or rustic. Blend the masala for a silky gravy, or leave the whole spices for crunch.
Great in a sandwich. Cook it a little thicker and it's a delicious picnic filling.

💡 Extra tips, not in the video Bonus tips

Even better the next day, once the spices have had time to settle.
Brown the lamb briefly in oil before pressure cooking for a deeper flavour.
